6 Medium sweet potatoes (3 ½ pounds) or you may substitute a can of candied yams
1/4 Cup brown sugar
1/4 Cup honey
1 Tablespoon cornstarch
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1/2 Cup pineapple juice
1/4 Cup chopped walnuts or pecans (optional)

(1) Cook sweet potatoes in boiling water for 20 to 25 minutes or until tender. (2) Peel and cut into 1/2” slices.  Arrange slices in a lightly greased 12” x 8” x 2” baking dish; set aside. (3) Combine brown sugar and next 6 ingredients in a saucepan.  Cook over medium heat, stirring constantly until mixture is thickened and bubbly. (4) Pour over the sweet potatoes, sprinkle with chopped walnuts. (5) Bake at 350 degrees F for 30 minutes.
